Jamón ibérico is the Spanish food British friends ask us about most — and, since you can no longer bring it home from a Spanish holiday in your suitcase, the one most people now have to buy online without knowing what to look for. What Iberico ham actually is

Iberico ham (jamón ibérico) is dry-cured ham from the Iberian pig, a dark, slow-growing breed native to south-west Spain and Portugal. Iberian pigs store fat inside the muscle, which is why a good slice looks marbled and turns glossy at room temperature.

It is not the same as the serrano ham in most supermarkets, which comes from white pigs, and it is not Parma ham. → 7 mistakes British buyers make with Iberico ham

The two things that decide quality

  1. Breed percentage: 100%, 75% or 50% Iberian.
  2. Diet: bellota (acorn-fed, free-range during the winter montanera), cebo de campo (free-range, fed grain and pasture) or cebo (farm-raised on grain).

Spanish law requires both on the label and assigns a colour tag: black, red, green or white. Black means 100% Iberian and acorn-fed — the top tier. → Iberico ham labels explained

Where it comes from

What to buy in the UK

For most people: pre-sliced, black-label (100% Ibérico de bellota) ham from a well-known producer. It travels well, needs no equipment and is sliced correctly.
