Both are dry-cured hams, both are sliced thin, and both are among the great foods of Europe. But Spanish Ibérico and Italian prosciutto come from different pigs, cure for different lengths of time and taste noticeably different. Here’s what sets them apart.

Why they taste different

The pig. The Iberian pig stores fat inside the muscle, which gives Ibérico its marbling. Parma pigs are leaner white breeds.

The diet. A bellota Ibérico pig spends its final months roaming oak forests eating acorns, and its fat becomes soft and aromatic. Parma pigs eat cereals and whey from Parmigiano production, which contributes to the ham’s sweet, mild character.

The time. Parma cures for a minimum of 14 months; Ibérico for about two years at least, and the best legs for three or four. Longer curing means more concentrated, complex flavour.
